Spring Break Cake!

Happy Spring Break to all! We have been enjoying a week off and thankfully the snow that we started the week with is now gone. So I promised a recipe from my Mom and it is sure to be a hit. This recipe is simple, easy, quick and delicious!! The flavors are also refreshing after finishing a winter of heavy food. Give it a try and make your spring break even more SWEET!

Spring Break Cake
1 Pkg. White Cake mix
1 (8oz) Pkg. Cream Cheese (softened)
1 Large can crushed Pineapple (drained)
1 Small pkg. dry instant french vanilla pudding
1 (8 oz.) Container Cool Whip
Coconut (optional)

Prepare cake mix as directed on box and pour into a greased cookie sheet. Bake at 350 for about 15 minutes or until set in the center. Set aside to cool. In a bowl mix cream cheese and pineapple. Sprinkle in the dry pudding powder and stir in the cool whip. Once the cake it cool spread with topping. If you want a different flavor you can top it with coconut. Chill in the fridge until ready to serve.
